Zucchini Bread

I got this recipe from my mother several years ago. She got it from Roxanne Kooyman of Pocatello, Idaho.

Set the oven to 350 degrees F.

Grease two loaf pans.

Beat oil, sugar, and eggs until fluffy.

Whisk flour, baking soda, baking powder, cinnamon, and salt together.

Peel, seed, and grate zucchini to yield 2 C grated. Add to egg/oil mixture. Add vanilla extract. Mix.

Add dry ingredients and nuts and mix well.

Pour batter into pans and bake for an hour or until done by toothpick test.
