Sweet Potato Pie
Can you believe I never tried making sweet potato pie until 2020? And I had the recipe all along.
- unbaked pie shell
- 2 pounds yams (sweet potatoes)
- 1/2 C butter (1 stick!)
- 1 t cinnamon
- 1/4 t ground cloves
- 1/2 t ginger
- 1/8 t ground allspice
- 1/4 t salt
- 1/4 C brown sugar
- 1/4 C granulated sugar
- 3 eggs, separated
- 1/4 C lemon juice
- 1/4 C orange juice
- 1/2 C milk
- 3 T dark rum
Boil and mash yams.
Add butter, spices, salt, and sugars to the yams; mix until smooth.
Beat and add egg yolks.
Add citrus juice, milk, and rum. Mix well.
Beat egg whites stiff and fold in.
Pour filling into pie shell. Bake 10 minutes at 450 F, reduce heat to 350 and bake 25-35 more minutes or until middle is firm.
