Star Anise Chicken Wings
- 2 lb chicken wings (10-12 wings)
- 1/3 C soy sauce
- 2 T sugar
- 1 T dry sherry
- 2 slices ginger root
- a few cloves of star anise
- 1/3 C water
If necessary, scald the chicken wings in boiling water and singe the pinfeathers over a high flame, rinse and drain the wings
Put all ingredients in large sauce pan; bring to boil and simmer 20 minutes covered
Uncover; continue to simmer, stirring and basting wings frequently with the cooking liquid until liquid is reduced to 1/2 original amount.
Good served cold, e.g. after refrigerating overnight.
