Squash Casserole

Quarter squash and slice 1/2 inch thick.

Dice onion.

Cook squash and onion in a small amount of water in a covered pan until soft. Drain well.

Beat the cream cheese and egg together until smooth.

Put a couple pats of butter into a baking dish. Pour the cooked squash onion mixture in and toss around to melt the butter.

Add the cream cheese mixture and stir well. Salt and pepper to taste.

Top with a few teaspoons of butter and the crushed crackers if using.

Bake for 30 min at 350 F. Let stand 10 min before serving.
