Prune Hamentash Filling (Lekvar)
Modified from a recipe found online
- 2 C prunes
- 1 C water
- 1/4 C orange juice
- 1/3 C brown sugar
- 1/4 t salt
- 1 tsp orange zest
Combine all ingredients except the orange zest in a medium saucepan
Heat to boiling over medium heat, reduce to simmer, and cook until prunes are soft
Puree in a Foley mill
Add orange zest and mix well
