Lemon Drop Pepper Jelly

- 3/4 lb lemon drop peppers
- 2 pouches Certo pectin
- 2 C lemon juice
- few drops yellow food coloring
- 6 C sugar
Puree peppers and one cup lemon juice in blender or food processor
Combine the puree, remaining cup of lemon juice, and sugar in a large saucepan
Bring to a boil; boil 10 minutes, stirring constantly
Add liquid pectin, return to boil, boil 1 minute, stirring constantly
Remove from heat, add food coloring
Ladle into hot jars, seal
