Lemon Drop Pepper Hot Sauce

- 2 C fresh lemon drop chili peppers, stems and seeds removed
- 1 t coriander seeds
- 1/4 t cumin seeds
- 4 cloves garlic
- 1 C apple cider vinegar
- 1/4 C olive oil
- Honey, to taste
- Salt, to taste
Simmer peppers and minced garlic in the vinegar until peppers are soft.
In a skillet over medium heat, toast coriander and cumin until just fragrant (10 seconds (!).)
Put simmered peppers and toasted spices in blender with olive oil. Blend until very smooth, 3 to 5 minutes.
Strain through a fine-meshed strainer. Push liquid through with a rubber spatula.
Add honey and salt to taste (start with 1/4 t salt.)
Store in refrigerator.
