Honduran Chicken
When I was a kid we had (and my mother still has) a cookbook Favorite Recipes
From the United Nations, published by the United States Committee for the
United Nations in 1951. There was a page for each country in the UN. This one was
from the page for Honduras, so we called it Honduran Chicken. Below the recipe
is handwritten

Slurp
- 4 T olive oil
- 2 cloves garlic, minced
- 1 cut-up chicken
- 2 tomatoes, peeled & diced (may be canned)
- 2 pimentos cut in strips, or 1 1/2 T pimentos
- 2 T capers Note! This recipe will be OK if you leave out the pimentos, but it MUST have its capers!
- 12 stuffed olives, cut in half
- 1/2 t salt
- 1/4 t ground black pepper
- 1/4 C tomato juice or liquid from canned tomatoes or water
Heat olive oil and brown chicken and garlic in it.
Add remaining ingredients and simmer until chicken is done, about 3/4 hour.
