Honduran Chicken

When I was a kid we had (and my mother still has) a cookbook Favorite Recipes From the United Nations, published by the United States Committee for the United Nations in 1951. There was a page for each country in the UN. This one was from the page for Honduras, so we called it Honduran Chicken. Below the recipe is handwritten

   Good good good
   Yum Yum
   Slurp

Heat olive oil and brown chicken and garlic in it.

Add remaining ingredients and simmer until chicken is done, about 3/4 hour.
