Hedgehog's Yellow Cake
This recipe is the subject of the beginning readers' book Hedgehog Bakes a Cake by Maryann MacDonald. From the back of the book:
This yields a heavy, sweet cake sort of like a pound cake. It would go well with a cup of tea.
- 1/2 C (4 ounces) butter or margarine
- 1 1/4 C (10 ounces) sugar
- 1 1/4 C (5 ounces) all-purpose flour
- 2 eggs
- 1/2 C (4 fluid ounces) milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Set the oven to 350 degrees F.
Butter a 9-inch round pan.
Cream butter and sugar, add eggs and mix well.
Whisk flour, baking soda, and salt together.
Add dry ingredients alternately with milk.
Pour batter into pan and bake for 30 to 35 minutes.
Eat warm with a glass of milk.
