Golden Corn Bread
This came from the back of the Quaker Cornmeal box years ago. Still a winner. Really quick to make and tasty.
- 1 C yellow corn meal
- 1 C white flour
- 1/4 C sugar
- 1/2 t salt
- 4 t baking powder
- 1 egg
- 1 C milk
- 1/4 C oil
Measure dry ingredients into a small mixing bowl. Whisk together.
Break egg into a medium mixing bowl, beat.
Add oil to egg, beat more.
Add milk, mix.
Add dry ingredients, beat with egg beater until smooth, about 1 minute. Do not overbeat.
Bake in greased 8" square pan or muffin tins in 425 degree oven 20 to 25 minutes.
