Fresh Peach Crisp
A vendor from Wilson's Peaches, 4302 South 2675 West, Roy, Utah (Pride in Every Peach!), was giving away cards with this recipe at the Pocatello Farmers' Market on September 28, 2013. Their peaches were huge (I could have got the 4C sliced peaches the recipe calls for from 3 peaches -- maybe 2 1/2) and delicious.
- Topping
- 1/2 C flour
- 1/2 C quick cooking oatmeal
- 1/2 C brown sugar
- 1/4 C butter
- 1/8 t baking soda
- 1/8 t baking powder
- 1/2 t salt
- Filling
- 4 C sliced Wilson(sic) peaches
- 1/2 C granulated sugar
- 1/2 t cinnamon
- 2 T butter
Blend topping ingredients together as for pie crust.
Mix filling ingredients together and place on bottom of buttered 8 x 8 inch baking dish.
Sprinkle topping over peaches.
Bake in 350 degree F oven for 45 min.
