Deep Dish Pizza Crust

I haven't used this recipe, but it sounds plausible. This is an attempt to duplicate the Pizzeria Uno style of pizza. I copied this from a report about pizza that a student had done as a research project in a library class or workshop my mother ran. I will not reveal where that student photocopied it from

In bowl of an electric mixer, dissolve yeast in water.

Add oils, cornmeal, and 3 C of flour. Beat for 10 minutes with the mixer paddle.

Change to dough hook, add the other 2 1/2 C flour, and mix for several minutes.

Let rise, punch down, let rise again, punch down again.

Oil round cake pans (olive oil suggested); put dough in each and push out to the edges, running dough up the sides of the pans. Proceed to "Deep Dish Pizza Filling" recipe.
