Date Nut Cookies
There was a pad of copies of this recipe in the bulk foods section of the WinCo supermarket in Pocatello in May of 2017. I took a copy and made a batch of cookies. I was low on spices for that first batch and used only 1/2 t of cinnamon instead of 1 t of pumpkin pie spice. I like these OK as made and think they will be better with the full amount of spice -- at least, worth trying again.
- 2 C flour
- 2 C pitted dates
- 1/2 t salt
- 1/2 t baking soda
- 1 t pumpkin pie spice
- 1/2 C butter (1/4 lb)
- 1 C brown sugar
- 1 egg
- 1 t vanilla extract
- 1/2 C buttermilk
- 1/2 C chopped pecans
Preheat oven to 375 F.
Sift and measure flour
Slice dates, dredge with 2 T of the flour
Whisk remaining flour with sale, soda, and spices
Cream butter and sugar. Add eggs and vanilla, beat well.
Add dry ingredients alternately with buttermilk.
Stir in dates and pecans.
Drop by teasponfuls onto greased or parchment paper-lined baking sheet.
Bake 8 to 10 minutes.
