Cranberry Fruit-Nut Bread
I found this recipe on the back of a bag of Ocean Spray cranberries a long time ago.
- 2 C flour
- 1 C sugar
- 1 1/2 t baking powder
- 1/2 t baking soda
- 1 t salt
- 1/4 C solid vegetable shortening + enough to grease loaf pan
- 3/4 C orange juice
- 1 T grated orange rind
- 1 egg, well beaten
- 1/2 C chopped walnuts
- 1 orĀ 2 C coarsely chopped cranberries
Preheat oven to 350 degrees F
Grease a 9" x 5" x 3" loaf pan with shortening
Whisk together dry ingredients
Cut in 1/4 C shortening with a pastry blender
Combine liquid ingredients and add, stirring just enough to dampen the dry ingredients
Fold in nuts and cranberries
Spoon batter into greased loaf pan, spreading corners and sides higher than center. Bake at 350 degrees for about 1 hour, or until a toothpick inserted in the middle comes out clean.
Store overnight for easy slicing.
