Coconut Buns
From Hot Bread Kitchen cookbook, which I bought at Bittersweet Barn tag sale in Webb's Mills, Maine. This is another of those examples of, "If there's one recipe in the book that you make over and over, you've got your money's worth from it."
- 4 C flour
- 1/2 C sugar
- 2 t baking powder
- 1/2 t ground cinnamon
- 1/4 t salt
- 1/4 lb butter (8 T) softened
- 3 eggs
- 1 t vanilla extract
- 1 C shredded coconut
- 1/4 C raisins
- scant 1/2 C coconut milk
Preheat oven to 350 degrees
Line a cookie sheet with parchment paper
Whisk dry ingredients together or just mix with dough hook in stand mixer
Add butter and mix in
Add the rest of the ingredients and mix until it all comwes together in a thick, sticky dough.
Let the dough rest in the bowl for 5 minutes.
Form into a dozen or more balls and place on parchment paper on cookie sheet
Bake for about 30 minutes or until golden brown and your kitchen smells like toasted coconut.
