Claremont Salad
Arlene's mother must have typed this recipe out and given it to the friend who posted on Facebook in 2020. That means it must be at least 33 years old.
This recipe does not have any dairy ingredients, so is kosher for meals with meat; also, it won't go bad if it stays outdoors for a long time at a cookout.
Claremont Salad was known to patrons of the Claremont Diner in Verona, New Jersey in the 1950s or earlier. The dish is popular in the western suburbs of Newark, but we are mystified to this day at having found Claremont Salad in a supermarket deli in Halifax, Nova Scotia.
- 2 C shredded cabbage
- 1 cucumber sliced thin
- 1/2 green pepper, choppped
- 3 T minced onion
- 1 carrot, grated
- 3 T sugar
- 3 T vinegar (probably wine or cider vinegar is preferable to white vinegar)
- 1 T water
- 2 T oil
- 1 t salt
- 1/8 t garlic powder
Combine sugar, vinegar, salt, garlic powder, and water
Combine vegetables in serving bowl
Add oil, mix
Add sugar - vinegar mixture, mix
