Blackeyed Peas
I just winged it on Jan 1, 2022, and it came out worth preserving
- 1 C dried blackeyed peas
- 2 C water
- 1/2 t salt
- 2 T butter
- 1 medium onion
Rinse peas. Combine dried peas, water, and salt in medium saucepan. Bring to a boil, cover, and allow to stand for several hours.
An hour before you want to eat, bring the peas back to a boil in the same water. Reduce heat to keep them simmering or boiling gently.
Chop onion. Melt butter (don't skimp on butter) in a small frying pan and saute onion over low heat until it's well browned.
Add onion to beans when the beans are beginning to be tender and half the water has boiled off.
Keep the pot warm on the stove until you want to serve it.
