Barbecue Baked Beans

- Ingredients
- 3 (about 15-ounce) cans pinto beans or 1 lb dried beans
- 1 medium yellow onion
- 1 medium red bell pepper
- 5 large cloves garlic
- 4 slices thick-cut bacon -- OPTIONAL
- 2 tablespoons olive oil
- 1 cup barbecue sauce
- 1/2 cup ketchup
- 1/4 cup apple cider vinegar
- 2 tablespoons packed light brown sugar
- 2 tablespoons molasses (not blackstrap)
- 1 tablespoon yellow mustard (prepared, not powder)
- 2 teaspoons Worcestershire sauce
- 2 teaspoons smoked paprika
Using dried beans
Morning -- Pick over beans. Cover them with lots of water, bring to a boil, and let sit until evening.
Either way
Cook bacon and drain on paper towels. If you use a large cast-iron skillet for this, you can do the whole canned bean process in one pot.
In 1T reserved bacon fat and 2 T olive oil, cook chopped onion, bell pepper, and chopped garlic.
Using canned beans
Combine all ingredients except bacon and bring to a boil.
Arrange bacon on top, and bake 30 minutes at 350 degrees
Back to dried beans
Drain and rinse beans.
Combine all ingredients except bacon in crock pot. If liquids do not reach top of beans, add water to cover. Arrange bacon on top.
Cook overnight on low
