Lee's Banana Cake
This has been on a hand-written card in my recipe file for many years. It is from Arlene's Aunt Lee. The card has Charley's name on it, evidence that this was once our contribution to a PTA or elementary school class recipe collection.
- 1/2 C shortening
- 1 1/2 C sugar
- 2 eggs
- 1 C mashed bananas (usually 3 bananas)
- 1/4 C sour milk * (if not sour, see alternate quantities of baking SODA and POWDER)
- 2 C flour
- 1/4 t baking POWDER * (if milk wasn't sour, use 1 t)
- 3/4 t baking SODA * (if milk wasn't sour, use 1/2 t)
- 1/2 t salt
- 1 t vanilla
Preheat oven to 350 degrees
Cream shortening and sugar
Add eggs, beating after each
Whisk dry ingredients together
Combine liquid ingredients
Add dry and liquid ingredients alternately to creamed shortening-sugar-eggs
Bake about half an hour, until a toothpick comes out clean
