Belle's Baked Oatmeal

• 1/2 C oil
• 1 C milk
• 2 eggs
• 1/2 t vanilla extract [optional]
• 1 t salt
• 1/2 C sugar [optional]
• 1/2 C brown sugar
• 2 t baking powder
• 1 t cinnamon
• 1/2 t nutmeg
• 2 1/2 C rolled oats (regular, not quick nor instant)
• 1 C raisins, berries, walnuts, etc [optional]

Beat eggs, oil, and milk together in a large mixing bowl.

Mix dry ingredients in another bowl.

Add dry ingredients to liquid, mix. Add raisins, berries, or not, mix.

Pour into greased 8x8 baking dish. Cover and refrigerate overnight.

In the morning, uncover and bake 35 minutes at 350 degrees f.
