Bagels

Dough

• 1 T instant yeast
• 1 1/2 C lukewarm water
• 1 T non-diastatic malt syrup, malt powder, or brown sugar
• 4 C flour
• 2 t salt

Boiling solution

• 2 quarts water
• 2 T non-diastatic malt syrup, malt powder, brown sugar, or molasses
• 1 T granulated sugar
